Today is Våffeldagen,  a national waffle day is a holiday that originated in Sweden. A celebration of the start of spring season. Traditionally waffles are eaten during spring time due to the fact that fresh milk and eggs once were hard to get during the cold winters in Sweden .Being that my boyfriend is part Swedish, I am always looking for ways to incorporate the tradition of his Swedish heritage. A good way to do this is by recognizing the holidays of the culture. In honor of Våffeldagen, we are making homemade waffles for dinner this evening, using a recipe found on Seveur. Of course in Swedish tradition we topped our waffles with lingonberries & whipped cream.
